Instructions
  1. Put the liquid ingredients in the bread machine bowl, add the salt, sugar and then flour and yeast. Put the machine on the dough cycle.
  2. For the apple filling, heat the butter in a frying pan. Add the diced apples. Heat until they soften and remove a bit more moisture – but don’t overcook them! Add the cinnamon and sugar and combine and simmer for another couple of minutes. Then turn off the heat.
  3. When the dough is done, roll out to 1/2″ thickness. Put filling on half of the rolled out dough and fold the other half of the dough over the filling.
  4. Cut the dough section on the diagonal first one way and then the other. Then combine bits of the chopped dough and apple mix into 1″ thick disks about 3″ to 4″ around. Allow to double in bulk
  5. While the fritters are rising make the glaze. Combine the icing sugar with either cider syrup or maple syrup and then thin with water until the glaze is thin enough to be easily applied.
  6. Fry the fritters, flitting halfway through until done. This will be when the volume of bubbling drops – but don’t wait until it ceases.
  7. Drain the fritter and when cooled enough to handle dip the top into the glaze and then cool on a baking rack.
